Vegetable Revival Mix

Ingredients:
1/8 cup celery minced
1 1/4 tbsp red bell pepper minced
3 tbsp onions minced
1/8 cup shredded carrots minced
1/2 cup shredded cabbage
2 tbsp broccoli florets & stem
1 tsp sliced black olives chopped
1 1/2 tsp light mayo
1 1/2 tsp cream cheese regluar (use light if available)
1/4 tsp dried thyme (use fresh to taste)
1 tsp shredded carrots (reserved)
1/c shredded green leaf lettuce
1 1/2 tbsp shredded cheddar cheese (light or fat-free)
1/8 tsp dried pepper flakes
1 Pita whole wheat fat free (this recipe filled a 4" pita)

Preparation:
Mix together first 10 ingredients, season with salt & pepper and set aside.

Warm pita in oven for 2-3 mins (for crunchier bread keep in for a few more mintues). Cut pita in half and fill each half of the pita with filling, top with lettuce, shredded carrots and shredded cheese. Enjoy!
