(1) 1 cup rice, cooked with 1 Sazon Goya spice packet*
16 oz. can refried beans
(2) 1 lb. ground beef cooked with taco seasonings & 1/2 cup chopped green pepper
(3) 16 oz. salsa
(4) 1 lb. Velveeta (Mild Mexican is my favorite), sliced 1/4 inch thick
Preheat oven to 375 degrees. Mix the first two ingredients in a 9 X 13 inch rectangle glass dish and spread evenly. Spread taco meat for the next layer. Spread salsa, evenly on top of beef. Place the Velveeta cheese on top of the salsa. Cook uncovered for 30-40 minutes, or until bubbly.
*Sazon Goya is found in the Hispanic section of the grocery store. Rice tastes just like the rice found at the Mexican restaurant.
** Itís rather spicy made like this, so you can use plain cooked rice, regular Velveeta and mild salsa to make it milder.
