Autumn Colors Salad
About 4 cups peeled, cubed sweet potatoes or yams
1 apple, skin on, chopped
2 stalks celery, sliced
1 small red onion, chopped
1 teaspoon fresh ginger, grated
Rice vinegar to taste
Steam potatoes till soft, not mushy toss all ingredients lightly dress with vinegar to taste and chill.
