Delicious Carrot Cake

Ingredients:
2 Cups Sugar
1 1/2 Cups veg. oil
4 eggs
2 1/2 cups of flour sifted
2 tsp salt
2 tsp cinnamon
2 tsp baking soda
3 cups grated (coursely) carrots
1 1/2 cups chopped walnuts (for carrots and walnuts use salad shooter, saves time and works great)
CREAM CHEESE FROSTING RECEIPE 1 pkg 8oz cream cheese
1/4 cup margarine or butter
1 tsp vanilla
1 pkg powdered sugar (3 3/4 cup approx.)

Preparation:
Combine sugar, oil and eggs. Beat at med speed 2 minutes sift dry ingredients all together (flour, salt cinnamon, baking soda) Add to oil mixture and beat at low speed for 1 minute. Add grated carrots and nuts. Spread batter in a greased 13x19x2 pan. Bake at 300 degrees for approx 1 hour (check at about 50 min and do tooth pick test) When cool spread with cream cheese frosting. CREAM CHEESE FROSTING RECEIPE let cream cheese and butter soften at room temp. Beat together and add vanilla gradually. beat in sugar until mixture is all combined evenly. Spread on colled cake. YUMMY YUMMY
